Cocktails with a View: Five Drinks from Our Bar

Our cocktail bar overlooks the Atlantic. That sentence does a lot of the work, but the drinks list does the rest. Here are five we would point a first-time guest towards.

Wild Atlantic G&T

Dingle Gin (made down the road on the next peninsula over) with Fever-Tree Mediterranean tonic, a wedge of grapefruit, and a sprig of rosemary lightly bruised over the top. The most-ordered drink on the list, and for good reason.

Derrynane Sour

A house take on a whiskey sour. Powers Three Swallow over a generous squeeze of lemon, simple syrup, egg white, and three drops of Angostura bitters across the foam. Smooth, balanced, and underrated.

Kenmare Bay Spritz

A long, light Aperol-style spritz with elderflower instead of orange. Prosecco, elderflower cordial, soda, a wedge of cucumber, and a single rasp of fresh mint. Perfect on the deck when the sun is still up.

Old Fashioned, our way

Redbreast 12 Year, brown sugar dissolved with two drops of orange bitters, a generous twist of orange peel over the glass. Slow drink, slow chat, fire if the season calls for it.

Espresso Martini (the late-evening one)

Vodka, fresh-pulled espresso from the coffee machine, Tia Maria, simple syrup, three coffee beans on top. Brilliant after dinner, especially before a night-time stargazing walk down to Carroll’s Cove.

A note on the bar

The full list is much longer — we have a 30-strong Irish whiskey wall, a small natural wine list, and rotating local craft beers on tap. Pull up a stool, tell our bartender what you usually order, and let them recommend the next thing.
